Flavoursome Roast for Two

Considering these are young birds, I was very pleasantly surprised at the amount of flavour these spatchcock have. Delicious roasted with a lemon and herb chicken liver stuffing. A perfectly sized roast chicken for two, with enough leftover for a chicken & salad roll for lunch.
