If you do not list any cutting specifications in the notes of the order form, your carcass will be cut as follows.
Leg: cut in half for roasts
Loin: cut into chops
Shoulder: cut into cutlets
Rack: cut into cutlets with the cap on
Flap: cut into spare ribs
Neck & shank: shanks supplied natural, neck cut into rosettes
Offcuts and trim: all supplied in one bulk bag
